Jicama root also has been found to contain, "inulin", which was found to reduce high blood sugar in rats affording an anti-diabetic effect. It is also noted to be a good source of carbs and fiber for rats containing no toxins that would harm a rat. Based upon the present available data, feeing raw jicama root once a week is fine to do.

I tried it years ago; our squirrels then didn't like it either. That said, some may.
Though a source may be safe to eat; whether they will choose to eat it is another matter.
