I think it is just what I have seen called gaping. Some of the seem to do it and others don't. Not a big issue if I understand correctly.

Pete does the same thing--guppy mouth. Just don't squirt formula when the little guy is guppying. Don't want him to get a snootful
I've read this is called a "feeding seizure". You may be able to gently tap them on the nose to bring them out of it then continue feeding. But I've had some do it till long after the nipple was removed, and tapping didn't work. But it is common, nothing to be alarmed about.
