What should an 8 week old squirrel be eating and how much ? Thanks so much for any help .

Nuts and seeds should be only treats, like giving candy to a toddler. *Maybe* a nut a day.
Are the still taking formula? If so, what type... they usually do not wean until older than 8 weeks.
Baby squirrels should always be started on rodent block as their first and only solid foods.. this establishes a healthy diet. However, feeding them nuts make is much more difficult to introduce a healthy diet (I call this the "difficult path").
Nuts, seeds and dried corn are some of the foods that are very bad, they are "calcium robbing" foods that will weaken bones and eventually result in Metabolic Bone Disease (MBD.

Rodent block can be commercial extruded block like Mazuri or Envigo (AKA Teklad). When feeding this type of rodent block it should be about 75-80% of everything they eat. There is also a supplement block called Henry's Healthy Block (HHB) that are a supplemental block and they need only eat 2 of these each day. If you go with Henry's don't get the plain block, get the picky or walnut or hazelnut, etc.

When you try to switch their diets, they will refuse to eat for quite a while... they may make you believe they are "starving to death" but I PROMISE you a squirrel will not starve themselves to death when they have perfectly edible and healthy rodent block available to be eaten. This is the "hard" part in the "difficult path" that should be followed for the health of the squirrels.
And 6 ounces is small for 8 weeks old. I'd try to get them back to eating formula a couple times a day... proper formula (Esbilac Powdered / Fox Valley) is the most healthy thing they can eat.
