I am building a large cage for my flying squirrel and had the idea of placing a few live plants in the cage. Does anyone know of a "safe plant" list?

Thanks, this is very informative diet information. I was looking more for decorative plants that would not be placed in the cage that wouldn't be harmful. Whart about ferns and moss? - Brian
There are several states that do not allow folks to keep Flyers as pets.
I would suggest you change your location in your profile, to something less precise.
(If you get my drift)
BTW, I have a son and a daughter that live within five miles of you.
Many household decorative plants are toxic to some degree. I really don't have a list, so, be careful.
Some of the healthy vegetables that were on the food list, can be grown in a pot, inside the cage.
Proper light would be the only concern there.

One of the best houseplants for this are the "spider plants"

They are hanging plants too, which I think would be the most fun. They are not only non-toxic, they are one of the best natural air purifiers around!
Palm trees are another good choice, but you need to know your plants. Many nurseries sell a plant known as a cycad as palms - they even call them sago palms:

and the fruit from them is absolutely DEADLY. Palms are fine but like I said, if you don't know your plants, speak to a reputable nursery person and make sure you get a palm.

Skul - Thanks for the heads up. It's a Southern flying squirrel not native here born in captivity, but I will heed your advice.
Crittermom - Minimal lighting is one of the challenges and spider plants are a good idea.
Thnk-you both.
