I've been buying nuts in the shell by the pound while they are available for the holidays. I know that after Christmas they disappear until next year. I've read that walnuts can develope mold, but do others, like almonds, hazelnuts, and brazil nuts? Should I freeze all of them in the shell if I want them to be safe to feed several months from now? Normally, for us human use, I just stick them in the cabinet.

If in they have the shell, store them per the package instructions. Like most nuts storing in a cool, dry and dark area is best to prevent from going rancid. If the nuts are not in the shell, I freeze them in a freezer bag. I'm the queen of buying up those holiday nuts in the shell. Last year, the grocery store had Brazilian nuts, Almonds and Pecans in shell for $.99/lb. I bought everything they had -50lbs.

I freeze all mine. Put them in gallon freezer bags and date them. I take a bag out, take half out, put the rest back and let them sit at room temp, after they 'melt'...I dry them and store them in the cabinet in a jar with a lid.
